Description
The holder of this Badge has attended the Fresh Pasta Course, held by the School of Italian Cuisine. Completion of the Fresh Pasta Course allows the student to acquire skills, competencies and knowledge of one of the pillars of culinary traditions in Italy, as well as using correct operational techniques and working procedures in accordance with hygiene/health standards in force. The teaching programme is held in 3 lessons lasting 3 hours each.
Badge Criteria
To obtain the Fresh Pasta Course Badge, attendance is required of at least 80% of the total course hours. The courses are held more than once in the same year (9 sessions each in four-monthly periods). Skills
The holder of this badge has demonstrated that he or she possesses and knows how to use the following SKILLS: creating preparations based on fresh pasta; creating preparations based on fresh filled pasta; using work techniques acquired in new situations; making balanced preparations in accordance with principles of healthy nutrition; assessing the quality of products used; and the following SOFT SKILLS: planning work processes, taking account of available time and resources; always staying focused on objectives, given the importance of time. The holder of this Badge has also successfully acquired KNOWLEDGE relating to: the main techniques for making fresh pasta; the characteristics of products used; the standards of hygiene/health regulations; techniques of food preservation, with special reference to fresh and filled pasta.
